Essential fatty acids (EFAs) are just that, they are essential, meaning that they must be provided by the diet or supplements. There are two important classes of essential fatty acids, omega-3 and omega-6, which refer to the chemical structure of the fat molecule. EFAs are not easily found in the food supply and often times the form of these fats found in food is unable to be converted to the beneficial components in the body. Aging, stress, or a high consumption of saturated or trans fatty acids can contribute to an imbalance of EFA’s in the body.
